Very Tasty Cookies!

It is often the case that I take pictures of my latest hobby then forget to post about it right away.  Well, this happens to be one of those situations.  Over this last Christmas holiday, I attended two cookie exchanges and baked a lot of cookies.  22 dozen to be precise.  Yeah, that is a lot of freaking cookies.

My favorite cookie book has to be the Betty Crocker Cookie Book (the newer version).  However, this last year I was stumped.  I wanted something NEW and FRESH (or whatever that means).  Thankfully Betty Crocker yet again didn’t let me down and posted recipes on their website from the latest cookie contests they had.  So here are the two that I picked:

The one thing that I want to mention is that I actually modified the recipes to make it all from scratch.  As you will notice part of the recipe calls for a Betty Crocker cookie mix packet, the ones that you buy in the store.  Well, that portion can be substituted by looking up the scratch version which I found in my Betty Crocker Cookie book.  But, I will mention that it was a pain in the butt to do it this way and I highly recommend just buying and using the packets.

The balls right before they are going into the oven.  Unfortunately, my cooked picture of this is AWOL but the picture below looks a lot like the finished product (except that it’s missing a slight tan).

If I had to pick my favorite (and they were both very good), it would have to be the Spumoni Chunk Cookie because it had more interesting qualities to it.  Don’t get me wrong – I love chocolate.  But, the chocolate pillow cookies were almost too rich for me.  Though, I didn’t hear anyone else complain!  Enjoy!
