…never boiled an egg.
Seriously.
Well, a great chef’s salad is not complete without a hard boiled egg. So, being the Net savvy person I am, I Googled it. The resulting instructions can be found on the Recipe Source site and come from the cooking master Julia Child herself. I will sum up the recipe to say that you briefly boil the egg (from cold water to boiling with the egg in the water the entire time), let it sit for 17 mins, throw it in some ice water for a couple of mins, boil it for ten seconds again, and then put it back in the ice water. Suffice to say that this isn’t how I remember my family boiling eggs (we threw them straight in boiling water). And, it’s a lot more time involved.
However, the result really is a PERFECT boiled egg. I ate the first batch while they were still warm. They were amazing!
If you are wondering what sort of eggs I used, these are Free Range Amish Eggs from Faith’s Farm which is about an hour and half from where I live. I bought the eggs at a local co-op grocery store which was expensive but I was in a hurry. For some reason, the regular eggs from Jewel/Dominick’s make my digestive system super upset, but the free range eggs (of any brand) don’t. Go figure.
Another way is bring water to a boil, remove from heat and let it sit in the water for 10 minutes. Its faster than the cold water approach, but if the eggs are cold, the shells will crack a little when it hits the hot water.
Since easter is coming up and you want to do large quantity of eggs, put the eggs in a baking dish and fill with cold water and put in oven for at 350 degress for 30 minutes.
